German Potato Sausage Soup

I'm always looking for healthy, delicious dinner ideas, so when my friend Amy recommended this soup from Diabetic Living, I had to give it a try.

Not only was it super tasty, but it was loaded with healthy vegetables. I love that!

What you'll need:
12 oz Turkey Sausage, uncooked
8 oz Mushrooms, sliced
1 medium Onion, chopped
1 stalk Celery, chopped
1 tsp Caraway Seeds, crushed
1/4 tsp Ground Black Pepper
1-3/4 cup Beef Stock
1/2 cup Light Beer or Non-Alcoholic Beer
2 medium Potatoes, cubed
1 cup small Broccoli Florets
2 cups Cabbage, shredded
1-1/2 cups Low Fat Milk

Chop up all the veggies and have them ready to go.

Remove casing from turkey sausages and chop into small pieces.

In a dutch oven, cook sausage, mushrooms, onion and celery over medium heat until sausage is browned, stirring to break up sausages as it cooks. Drain off fat.

Crack open a beer.

Steal a sip.

Give the boyfriend a sip too.

And then toss 1/2 a cup into the pot, along with caraway seeds, pepper and beef stock. Bring to a boil.

Add potatoes. Cover and simmer for 10 minutes.

Add broccoli. Cover and simmer about 5 minutes more or until potatoes and broccoli are tender. Stir cabbage and milk into sausage-broccoli mixture. Cook for 2 to 3 minutes or just until cabbage is tender and soup is heated through.

Serve warm and enjoy!

Makes six 1-1/3 cup servings

    I made this soup last night, it was so delicious and easy! It was the perfect meal to cure up my fiance's congestion from the cold I gave him :( oops! I took the leftovers to work today and it hit the spot! Love your blog and all of your recipe postings! Keep 'em coming!
